WHere is a simplified version of a cocktail featured on our latest menu. It's a batch pre-mixed that's bursting with flavours of the holiday season, which makes it perfect for a festive gathering. Save the extra cordial you can use for morning drinks, sweets, or to mix additional servings of this cocktail.
Bikini
Makes enough for 10 servings
For the Clementine Cordial (produces 750ml)
300ml fresh clementine juice
200ml newly squeezed lemon juice
500g caster sugar
To make the Drink (produces 850ml, to serve 10)
400ml premium vodka
100ml London dry gin
150ml peach liqueur
200ml clementine cordial (from the recipe above)
Whole cranberries, for garnish
Mandarin essential oil, as a final touch
Instructions
For the Cordial: Put the listed items inside a saucepan, bring to a simmer, mixing until the sugar dissolves. Next, turn off the heat and leave to reach room temperature completely. Decant into an sterilised bottle, seal keeping it in the refrigerator, it can be stored for around four weeks.
To make Premix: Pour the specified spirits and syrup into a sizeable container, leave to sit for one hour, then filter it preferably using muslin, to ensure it's completely strained.
For serving: Measure 85ml of the batch mix to a cocktail shaker containing ice, and stir gently for about 60 seconds until cold. Strain into an frosted cocktail glass or similar, garnish with a few cranberries and complete it by giving it a brief mist with the mandarin essence over the top.
